Today's salad started with a base of purple cabbage, baby spinach, mixed greens, and a handful of kale. I then added cherry tomatoes, cucumber, yellow beans, and some feta. Last I cooked up two mushrooms, red onion with a clove of garlic and voilà:
There was more than enough for Mum and I to share the salad and have a bit left over for supper tonight. Eating salad is so much easier when they are fun to make and look pretty.
