Thankful Thursday

I didn't want to get out of bed today. I wanted to just stay in bed and hide from the world. Nothing bad has happened, there is no crisis, no disastrous situation, I just wanted to give up. It is the same numb feeling that led me to type a three word post “I am lost” in the past. The feeling has been creeping up on me all week. In the midst of it I called a dear friend…it was wonderful. After we hung up my mom called…it was wonderful.

Today I am thankful for the invention of the telephone.

Day 4: I have a new veggie challenged. Thursday is normally a rushed take-out night because of youth. Tonight there was even more to do because I had a extra person to pick up. I ended up buying a salad from Sobeys. What other ways can a veg eat on the go? I don’t want to have a salad every Thursday night.

Sorry I haven't answered this sooner...I actually don't have a lot of time now either, but I think it's important and Thursday is fast approaching! ...All my suggestions will be vegan, of course.

I recommend Thai food. There's an awesome Thai restaurant here in Rochester whose vegetarian options on the menu are all vegan. I got the Thai Vegetable with brown rice last week. Absolutely delicious. The restaurant is actually a sit-down place, but you can take it to go and whether you eat there or not, the food is ready in less than five minutes. I'm not sure if your experience would be the same, but you could try that if you have Thai near you.

You could also pack a cooler and make a sandwich with some Tofurkey slices and Vegan cheese, along with some vegan mayo, lettuce, and anything else you might want to add. Or get a slice of vegetable pizza.

Wendy's sells baked potatoes now too and you can get apple slices from either McDonald's or Burger King, along with other fruits probably. Or make your own fruit salad and bring that in a cooler.

We have a Pita Pit here too, which sells pitas full of whatever you want. I can get a falafel and some other sandwich I can't pronounce and pile it with vegetables...very good and fast.

It's really all about preparation. If I planned to have to get a salad at Sobey's, I would bring along some pine nuts that I've toasted and maybe some sliced walnuts or almonds too to give it more flavor and nutrition. You can also add tofurkey to a salad.
